Even before you take your first bite of Garden at the Cellar’s white bean purée crostini, you can sense the sweetness of roasted garlic and the spicy aroma of oregano. What you can’t smell, taste or see however, is that Chef Will Gilson spent the majority of that morning at The Herb Lyceum at Gilson’s handpicking everything from the rosemary sprinkled on your bread, to the basil on top of your mozzarella.

But Chef Gilson wouldn’t have it any other way. A top priority for both of his restaurants is to strive to create local menus that are fun, fresh, sustainable and Fair Trade-friendly where possible.
